Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer dispensed at 200 ppm - good.
- Quat sanitizer solution in spray bottles at 200 ppm
- 3-compartment sinks available and maintained in sanitary condition
- Deli walk-in cooler and poultry walk-in cooler were both below 4C
- All other coolers and display coolers were at or below 4C
- Freezer temperatures satisfactory
- Hot holding cases and soup were held at above 60C
- Food storage practices satisfactory - all food stored off the floor and covered
- Ensure meat slicers are disassembled, cleaned and sanitized every 4 hours at a minimum
- Temperature logs for coolers well maintained - ensure temperatures for hot holding cases are also recorded
- No signs of pest activity noted
