Observation (CORRECTED DURING INSPECTION): Noted cheese at 22C stored at room temperature in containers that are intended to be frozen. Containers were thawed out. Staff member on duty brought out another set of frozen containers from the freezer at time of inspection.
Corrective Action(s): Ensure cheese is stored at 4C or less in cooler unit, if cheese will be kept on the cookline at room temperature then ensure time tracking is done and the product is turned over within two hours. Manager of premises to contact the district inspector to discuss options and methods of implementation.

Observation: Hand wash station beside the warewashing sinks did not have paper towel.

Observation: Noted minor fruit fly activity in the storage area and around the ware washing area in the back area of the premises.
Corrective Action(s): Do a thorough cleaning in this area and report activity to pest control technician/company.

Observation: Back storage area appeared cluttered and crowded. Boxes noted on the ground. Cleaning required under dry shelving units, under cookline, under sinks and counters in back area.
Corrective Action(s): Keep all items stored off the ground to facilitate cleaning. Declutter and organize back area. Do a thorough cleaning along the perimeter of the walls (under and behind equipment ie. cookline, shelving units, counters, coolers...etc).

Comments

Hand wash stations in the front service area x2 and washrooms were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4⁰C or less (walk in, under counter, prep cooler...etc).
Walk in freezer -18C and ice cream freezer -12C
All hot holding higher than 60⁰C (fries, mushrooms, gravy, chili)
Back door was closed at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Scoop stored in dipper well with cold running water.
Quat sanitizer at source and in containers with cloths submerged 200ppm.
High temperature dish washer achieved 71⁰C (with thermolabel).
