Observation (CORRECTED DURING INSPECTION): *Repeat Violation* In-use utensils were stored in a bucket containing soiled water.
Corrective Action(s): - The in-use utensils were sent to the dishwashing area to be cleaned and sanitized. The bucket was soiled water was emptied. The water was replaced with ice water solution.
- Staff was reminded that in-use utensils must not be stored in ambient temperature water.
- As mentioned previously, only store in-use utensils in either a clean empty container, ice water or temperature control (either less than 4 deg C or higher than 60 deg C) method.

Observation (CORRECTED DURING INSPECTION): One ceiling tile was missing in the back preparation area above the stainless steel prep table. The ceiling tile was moved to allow for repairs for equipment in the ceiling.
Corrective Action(s): The ceiling tile was put back in place and the table was cleaned and sanitized with food grade sanitizer which registered at 100 ppm chlorine.

- All freezer units registered a temperature at or below - 18 deg C
- All hot holding temperatures registered at or above 60 deg C
- All handwashing stations supplied with hot and cold running water, liquid soap and paper towel
Note: no leak observed in the plumbing underneath the handwashing station
- Low temperature dishwasher available for mechanical warewashing, sanitizer solution registered at 50 ppm chlorine on plate surface
- Three compartment sink is available for manual warewashing, drain plugs are available
- Food grade sanitizer spray bottle registered at 100 ppm chlorine
- FoodSafe Level 1 requirement met
- No sign of obvious pest activity
- External licensed pest control services are in place
