Observation (CORRECTED DURING INSPECTION): Rice observed cooling at room temperature in a bucket. Operator states rice has been cooling for max 30 mins.
Corrective Action(s): Remove from bucket, place into a shallow pan and cool in walk in cooler (less than 4C)

Observation (CORRECTED DURING INSPECTION): Pans of food stored on shelf, operator states it is lunch for staff only
Corrective Action(s): Remove pan and do not store food that is not intended for customer consumption in facility. Discard food.

Use a bleach solution in the kitchen area to wipe down cutting boards and food prep areas frequently.
Obtain a bleach spray bottle to keep in kitchen (currently one only available in front servery), bleach solution must be at least 100ppm residual (one ounce bleach to one gallon water concentration)

Corrective Action(s): Operator did not realize dishwasher sanitizer solution was empty. Operator switched to a new bottle and residual chlorine 100ppm. Monitor sanitizer to ensure it is not empty, obtain test strips from supplier to check residual
