Observation (CORRECTED DURING INSPECTION): Dishwasher in deli department was not sanitizing dishware properly and was measured at 0 ppm chlorine residual again.
Corrective Action(s): Sanitizer line was primed at time of inspection. 100 ppm - 200 ppm chlorine residual detected at the dish surface after final rinse cycle after priming. Ensure staff are monitoring the dishwasher's sanitizer level with chlorine test strips each morning, prior to using for washing any dishware. After changing sanitizer supply to a new bottle, ensure to prime the sanitizer line such that no air bubble is present in the line.

- Follow-up for dishwasher in the deli department.
- Ensure staff are checking the dishwasher's sanitizer concentration with chorine test strips each morning, prior to using the dishwasher. Also ensure to prime the sanitizer line each time after changing the sanitizer (ultra-san) bottle supply. See violation code 302 above.
- Deli manager was away. Discussed with department staff.
