Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in the bucket measured approximately 10 ppm. Wiping cloths were stored in the sanitizer.
Corrective Action(s): Prepare fresh bleach sanitizer at 100-200 ppm by mixing 1/2 teaspoon unscented household bleach per 1L water. Ensure sanitizer is always available when the kitchen is in use. Prepare sanitizer fresh daily before staring work in the kitchen and when the sanitizer looks dirty.

- 200 ppm bleach sanitizer prepared during inspection. Wiping cloths stored in the bucket of bleach sanitizer. Ensure sanitizer is prepared fresh before starting work and when the sanitizer appears dirty.
