Observation (CORRECTED DURING INSPECTION): Uncovered food stored in walk-in cooler. This may introduce contamination to the food. Operator covered all food trays/containers with food grade plastic at the time of this inspection.

Observation: Mice croppings observed in dishware washing area. A possible mice entry also observed behind cloth washer. Holes and gaps noted between floor and baseboards and the wall. Mice traps noted through out facility and it appears mice activity is limited only to dishpit.
Corrective Action(s):
Patch and block possible mice entries. Consider using steel wool or other material to block mice entrances.

- Ensure to clean affected areas using proper personal protectice equipment.
- Clean and sanitize dish pit area. Ensure to dry floor. Sanitize surfaces and monitor for mice activity.
- Do not leave food on floor. Ensure food is stored in pest proof containers.

- Hand washing stations maintained. All hand washing stations are to be supplied with paper towels in dispenser. All hand washing stations are to be supplied with hand soap in dispenser.
- All Cooling units measured at or below 4 degree c. Freezers measured at or below -18 C.
- Hot holding units for rice measured at or above 60 C.
- 100 ppm chlorine solution detected in sani buckets. Wiping cloths stored properly.
- Kitchen is well lit.
- Food is to be covered in storages.

General sanitation is overall good.
Kitchen counters and other food contact areas noted clean.
Ice maker observed clean and maintained. Ice scoop stored out of ice bin in a sanitary container.
Dough maker noted clean and free of excesive debris.
