Observation: A new high temperature dishwasher was installed a few months ago according to staff. The final rinse temperature of the high temperature dishwasher was below 71 degrees C internally after running it three times (~45 degrees C).
Corrective Action(s): Do not use the high temperature dishwasher until it can maintain a final rinse temperature of at least 71 degrees C. Use the other two domestic dishwashers in the meanwhile. Obtain a waterproof probe thermometer with a cover to check the final rinse temperature is at least 71 degrees C at the plate. Correct by October 26, 2016 (Wednesday).

Comments

Liquid soap, hot and cold running water, and paper towels were available at the handsinks.
Bleach was available on-site.
Coolers were 4 degrees C (40 degrees F) or colder.
Freezers were -18 degrees C (0 degrees F) or colder.
Food storage areas were clean, labelled, and organized.
Two domestic dishwashers were also present on-site.

*Temperature records were being kept; A few refrigeration temperatures were noted at 6 degrees C on the record sheet. Please have staff record the corrective action on the temperature records when cooler temperatures are above 4 degrees.
