Inspection of temporary kitchen (located in de-commissioned hospital kitchen).
-kitchen is approved to operate under a limited capacity with reduced food preparation and menu items.
-on-site food preparation primarily cold prep and re-therming of commercially prepared hot items sourced from approved vendors.
-single service utensils used other than what can be washed and sanitized in the dishwashers located in TRIM satellite kitchens.
-walk-in cooler 4 Celsius with temperature logs up to date.
-walk in freezer -18 Celsius with temperature logs up to date.
-3 compartment sink available and supplied with hot and cold water.
-sanitizing sink has 200 ppm quat sanitizing solution.
-2 hand sinks installed and supplied with hot/cold water and soap/paper towel dispensers.
-prep sink installed and supplied with hot/cold water.
-ensure pest control contractor monitors temporary kitchen for pest activity.
-ensure prep tables are broken down daily to clean and sanitize all soiled surfaces including crack where table folds.
-update sanitation plan to address new equipment, tables and and warewashing procedures on an as-needed basis.
-update food safety plan to address new menu items and food preparation procedures on an as-needed basis.
