Observation: Ice machine contained a small amount of debris on the inside. It was last cleaned two months ago according to the Supervisor.
Corrective Action(s): Drain and clean and sanitize the ice machine as per manufacturer's instructions to remove the debris and keep it in a clean condition; Correct today.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was available in the bucket in the kitchen. It was last filled earlier this morning when the restaurant had opened according to the Supervisor. Greater than 200 ppm chlorine sanitizer was available in the bleach spray bottle in the front service area.
Corrective Action(s): Supervisor refilled 100 ppm chlorine sanitizer into the spray bottle and bucket. Make sure the chlorine sanitizer and wiping cloth is changed frequently throughout the day to maintain it at 100 ppm (1/2 teaspoon bleach per L of water). Use the chlorine test strips on-site to monitor its' concentration throughout the day.

Observation: 1) Paper towel dispenser was not in good working order at a handsink near the ice machine. Note: Paper towel roll was available at the handsink.
2) Staff members were using a tool to turn the faucet at the ware-washing sink near the dishwasher. Supervisor stated that they would order the faucet for this sink. Note: Overhead sprayer was in good working order.
Corrective Action(s): 1) Repair or replace the wall-mounted paper towel dispenser with a wall-mounted paper towel dispenser that is in good working order; Correct within 1 month.
2) Replace the faucet at the ware-washing sink so that it is in good working order; Correct within 1 month.

Permit to operate was posted.
Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were at or below 4 degrees C and were equipped with thermometers.
Freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
A probe thermometer was available on-site.
Supervisor stated that food for the hot pot is cooked in the kitchen by staff and then served over a burner to keep it warm at each individual table.
Dishwasher final rinse sanitizer residual was at least 50 ppm (measured at 100 ppm) at the plate.
No signs of recent pest activity were present at the time of inspection.
Supervisor had a valid FOODSAFE Level 1 certificate (valid until December 20, 2020).
