Corrective Action(s): To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.

Staff adjusted to warmer to heat product to 62 C

Observation: Mulitple wiping rags in use without sanitizer prepared.

Test strips not available to staff to test prepared sanitizer strength.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Provide test strips to verify Quaternary Ammonia sanitizer concentration.

Observation: Mouse droppings observed on floor in corners under 3 compartment sinks and in corner adjacent to handsink.

Food debris collecting around back wheels of oven.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
