Routine inspection
-Upright two door cooler at 4 C. Raw meats stored separately from veggies - good.
-Upright two door freezer at - 18 C.
-Two door cooler in dining area at 0 C.
-Two drawer freezer at -15 C.
-Undercounter prep cooler with inserts at 4 C. Reminder: when it is not busy, the inserts should be covered with lid.
-Front beverage cooler at 1 C.
-Hot held foodsat or above 60 C.
-Discussed with staff how meat is cooked prior to hot holding. Two step cook method followed - good.
-Most preparation happens at an off site location (main site).
-Handwashing sink equipped with hot and cold running water, liquid soap and paper towel. Reminder: use paper towels to turn off taps!
-Bleach sanitizer (at 200 ppm for chlorine) in buckets available throughout facility.
-Two compartment available for manual dishwashing. Discussed steps involved in manual dishwashing. Refer to Fraser Health poster.
(Note: Facility ran out of regular unscented bleach at the time of inspection. Delivery expected in the next 2 hours. Please purchase from store or obtain from other location if delivery is delayed).
-Dishwasher not regularly used. Ensure temperature reaches 71 on plate surface if using dishwasher. Facility is limited to single-service utensils only.
-Permit to Operate posted.
