Observation: 1) One walk-in cooler is not able to maintain temperatures at 4C or colder (no food stored in cooler).
2) High-temperature dishwasher's booster is broken, and is temporarily set up to chemically sanitize dishware (chlorine).
Corrective Action(s): 1) Service part for walk-in cooler has been ordered. Please contact the health inspector once the cooler has been repaired. A second walk-in cooler and a few upright coolers are available in the meantime for cold food storage.
2) Work order has been placed for the dishwasher. Staff have been checking the temperautre of the wash cycle and checking sanitizer residual concentration with chlorine test strips in the meantime. Please contact the health inspector once the dishwasher has been repaired.

Comments

- Routine inspection conducted.
- All hand washing stations were accessible/unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels.
- Other sinks maintained in sanitary conditions and supplied with hot and cold running water.
- Quats sanitizer solution available at 200 ppm. Test strips available for monitoring.
- High-temperature dishwasher's booster is broken. Dishwasher technician has temporarily set the dishwasher up for chemical sanitizing. 100 ppm chlorine residual detected at the dish surface after final rinse. Wash temperature measured 65C. Chlorine test strips available for monitoring. A work order has been placed for servicing.
- All other coolers measured 4C or less (one walk-in cooler was broken and was not being used to store any food - see violation code 308 above).
- Walk-in freezer measured -18C or less.
- Hot-held food items measured 60C or hotter.
- Accurate thermometers available. Temperature logs well maintained.
- Good food storage practices noted.
- General sanitation good.
- Equipment and utensils maintained in sanitary conditions.
- Ice machine is currently not working and not in use.
- Dry storage areas satisfactory.

Serveries (2):
- Domestic coolers measured at 4C or colder, equipped with thermometers. Freezer temperatures were satisfactory.
- Hot-holding units (steam tables) are preheated prior to meal service.
- Sanitizer solution is brought to the serveries from the main kitchen during meal service times, then returned to the kitchen after meal service and cleaning.
- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- General sanitation excellent.
