303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): 1) 0 ppm chlorine sanitizer was measured at the plate after the dishwasher final rinse cycle during the inspection. Operator stated that the chlorine sanitizer of the dishwasher is checked each morning.
2) Surface sanitizer was not available inside a sanitizer pail or spray bottle near the prep. table in the baking area. Food handling was occurring at this prep. table during the inspection.
Corrective Action(s): 1) Operator called the technician from Ecolab who re-serviced the dishwasher at the time of inspection. 100 ppm chlorine sanitizer residual (minimal 50 ppm required) was measured at the plate after the dishwasher final rinse cycle.
2) Operator setup 200 ppm QUATS sanitizer in a sanitizing pail at the prep. table and placed a clean dry wiping cloth into it. Make sure surface sanitizer as per the approved sanitation plan is available near food handling areas to enable these areas to be cleaned and sanitized after each use.

Observation (CORRECTED DURING INSPECTION): Handsink near the baking prep. table and oven was blocked with a rack.
Corrective Action(s): Make sure handsinks remain conveniently accessible for handwashing purposes. Rack was re-located at the time of inspection.

Observation (CORRECTED DURING INSPECTION): A few baking trays were observed stored directly on the floor near the dishwasher.
Corrective Action(s): Baking trays were placed into the dishwashing area during the inspection so that they may be cleaned, sanitized, and air dried. Make sure they are stored at least 6 inches off the floor in an area protected from contamination after they have been air dried.

Permit to operate was posted.
Both handsinks in the front service area, handsink near the baking area, and handsinks in each of the washrooms were supplied with liquid soap, hot and cold running water, and paper towels.
Coolers were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Dipper wells were being used during the inspection.
Ice machine was in a clean condition and the scoop was stored separately.
No signs of recent pest activity was evident at the time of inspection.
200 ppm QUATS sanitizer was present in the labelled spray bottle in the front service area.
FOODSAFE trained Person in Charge/Operator was present on-site with a FOODSAFE Level 1 certificate valid until November 20, 2019. .
