Observation: Salmon sashimi product is not frozen for 7 days at -20C. The salmon on the receipt cannot be verified that it is frozen for 7 days at -20C.
Correction: Do not serve the salmon until it can be verified that it is frozen for parasite destruction or that it is under exemption. Date to be corrected: today

-Followup Inspection
-Supplier has confirmed that the salmon is farmed salmon and is exempted from freezing for parasite destruction. Reminder to always ask supplier if fish is suitable for sashimi before offering it as sashimi.
-Tape has been removed from nigiri rice machine
-Valid Food safe certificate provided on site
-Beef teriyaki bowl not stored at room temperature
-Soap provided at all handwash stations
-Bleach bottles are at 100ppm
-Proper handwashing has been observed from cooks and chefs
-Note: Send Teriyaki Sauce food safety plan to district Environmental Health Officer. Ensure proper cooking and cooling procedures are followed for the sauce.
