Observation:
- Dust, debris and old rodent droppings observed underneath the sink with the pop machine in the kitchen area and the front bar area (wooden cabinets, around the stereo system).
- Garbages and debris observed on the floor underneath equipment in the bar area.
- Dust build up observed around ceiling vents inside the kitchen (near the dishwasher).
Corrective Action(s):
- Ensure to empty the cabinets and have all surfaces thoroughly cleaned & sanitized before restocking.
- Ensure to routinely clean hard-to-reach areas.
- Remove dust build up on the ceiling & vent.

All freezers at -18C or below.
Hot held food items at 60C or above.
QUAT sanitizer measured at 200ppm.
Low temperature dishwasher reached 50C and final rinse water measured at 50ppm chlorine.
Glasswasher final rinse water measured 12.5ppm iodine.
Operator with foodsafe present.
Dipperwell is operational.
Overall kitchen sanitation maintained.
Monthly pest control service by professional third party company. No pest issues noted from 2023 August report. No signs of pest activity observed in the kitchen.
Ice machine is cleaned every week as per the head chef.

*Improvement in sanitation required in the bar section. Ensure to have daily cleaning schedule in place to maintain sanitation in the bar area. Have the lightings on brighter when cleaning to allow easier monitoring & cleaning.
