Observation (CORRECTED DURING INSPECTION): 5 liquid egg containers stored in the not working prep cooler in the main kitchen. All had internal temperature measured 18'C~19'C. Pictures taken. All discarded at this time.
Corrective Action(s): Ensure no potentially hazardous foods are stored in this unit, until repaired/replaced. All cold potentially hazardous foods (i.e. cut vegetables, dairy products (milk, cream, cheese), proteins - egg, meat, seafood) must be stored at 4'C or below AT ALL TIMES.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: No hot water available at the handwashing station in the main kitchen. Technician was contacted to come tomorrow morning.
Corrective Action(s): Ensure to use the hot water available at the dishwashing sink for now. Contact the health inspector once the handwashing station is repaired.

Observation: Rodent droppings were observed from the following areas:
1) corner of the main kitchen - by the dishwashing area
2) corner of the smaller kitchen - by the stand up fridge units
3) floor underneath prep counter, where dry storage bins are stored at the back
Corrective Action(s): Ensure to monitor for droppings EVERY morning and have them removed if observed. Treat the areas using 1000ppm chlorine (1:50).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Handwash sink in the main kitchen required a repair. Technician is to come tomorrow morning.
2) One of the prep cooler in the main kitchen not working. New unit is on order.
Corrective Action(s): Ensure to have the handwash sink repaired so that it dispenses hot water for proper handwashing. Ensure to have the prep cooler repaired/replaced and notify the health inspector.

Comments

Routine inspection conducted:

-Handwash stations at serveries and smaller kitchen adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Thermometers available for temperature monitoring.
-General food storage practice satisfactory throughout. Foods stored off the floor and in pest proof containers.
-200ppm chlorine solution available in labelled spray bottles for each station.
-Low temperature dishwasher achieved minimum level of chlorine (>50ppm) at plate level after final rinse.
-Traps in place. Professional pest control company contracted for monthly visits. Recent report checked.

General sanitation of the facility satisfactory.
