Observation: 1) Bags of onions placed on floor at the back storage area.
2) Two open cans of food observed in the prep cooler.
Corrective Action(s): Ensure to have the onions stored at least 6inch off the floor at all times to protect them from contamination. Ensure to have all open can foods transferred to food grade containers.

Observation: Few rodent droppings observed from floors of the back storage area and underneath dishwasher/prep table in the middle area.
Corrective Action(s): Ensure to have the droppings removed and all areas/food prep areas sanitized using bleach solution every morning prior to initiating any food prep in the morning.

Observation: Numerous unnecessary equipment/items stored in the middle/back area. All to me removed during renovation process.
Corrective Action(s): Ensure all unnecessary equipment/items that are no longer in use are removed during the renovation process.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer operating at required temperature of -18.
NOTE: Ensure the chest freezer in the main kitchen is defrosted.
-100-200ppm chlorine solution available in a bucket in the main kitchen.
-High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
-Walk-in cooler satisfactory. Back storage area satisfactory, except mentioned above.
-Ventilation canopy hood maintained. Ice machine not in use at this time.
-Professional pest control company contracted for monthly visits. Pest

Improvement has been observed with regards to the general maintenance and sanitation level of the facility. Pest infestation for the back storage area has improved as well.

Please contact the health inspector to notify when the renovation begins and ends to book for the re-opening inspection.

Owner came at the end of the inspection and renovation plan was discussed with the health inspector.
