Observation (CORRECTED DURING INSPECTION): Cooked and shredded salmon for sushi rolls was left out on countertop. No refridgeration. Salmon must be cooled quickly and kept cold before use. Discarded approximately 2 lb of prepared salmon.

Better but still requires further improvement; Failure to keep potentially hazardous foods such as fish, crab, chicken and cooked vegetables at a safe temperature is a very serious offence. Progressive enforcement will be implemented if these infractions continue to occur.
