Observation (CORRECTED DURING INSPECTION): 1. Numerous soiled utensils and knives stored in clean utensil storage areas.
2. Dried food debris accumulating in meat slicer
Corrective Action(s): 1. Note that all utensils (such as pizza slicers, sandwich knives etc) that are used throughout the day must be thoroughly cleaned and sanitized at least every 4 hours. DO NOT STORE soiled utensils among clean utensils. Correct immedilately
2. Meat slicer must be dismantled and throughly cleaned and santiized after use (or at least every 4 hours if used throughout the day). Correct immediately.

Corrective Action(s): Do not store any food items under plubming. Further, do not store any items directly on the floor. Minimum 6 inches clearance is required. Correct today

*** Quat sanitizer in spray bottles - 0 ppm Quat detected in 2 out of 6 spray bottles. Replenished with 200 pmm Quat solution at the time of inspection.
Test the sanitizer concentration is tested to ensure adequate concentration is available and promptly replenish with fresh solution if needed. 200 ppm Quat available in the main dispenser.
