Observation: Ice machine at bar observed with pink mold/film along the inside of the filter. Staff turned off the ice machine during inspection.
Corrective Action(s): Clean and sanitize the aforementioned ice machine as per manufacturer instructions to remove mold/film. Discard the ice currently in the ice machine. Do not use the ice machine until verified in a sanitary condition by the health inspector. Use the ice from the ice machine in the kitchen if necessary.

Observation:
1. Hand washing station upon entrance into kitchen and in back preparation area near the walk-in freezer not supplied with hot water during inspection. Both hot water nozzles at both hand washing stations are observed not in good working order.

2. Hand washing station at bar is not supplied with paper towel. Staff placed paper towel at the hand washing station during inspection.
Corrective Action(s): Maintain all designated hand washing stations supplied with hot and cold running water, liquid soap and paper towel AT ALL TIMES to ensure staff are washing their hands properly before handling food. Hot and cold running water must be available at adequate frequency and temperature to remove physical and biological contaminants. Failure to comply in future may lead to progressive enforcement action.

Observation: Rodent droppings observed on the floor underneath the wire shelves in the upstairs food storage area. No food is directly contaminated. Professional pest control company is contracted. Rodent traps are observed in place.
Corrective Action(s): Clean rodent droppings wearing appropriate PPE. Do not sweep or vacuum droppings. Sanitize affected areas with bleach sanitizer solution by mixing 1 part bleach with 9 parts water. Submit recent pest reports to the health inspector via email for review.

Observation:
1. Two buckets of dirty water observed stored directly in the mop sink.

2. Large boxes and other items observed stored directly on the floor in the upstairs dry storage area. The area is observed to be cluttered.
Corrective Action(s):
1. Discard dirty water in both buckets. Do not store dirty water on site as it can lead to entrance/breeding and/or harbourage of pests such as rodents and flies.

2. Move all boxes and other items which are stored directly on the floor to a shelf which is at least 6 inches off the floor. Do not store items directly on the floor to ensure the floor is cleaned adequately (as per approved sanitation plan) and to prevent rodent entrance/harbouring/breeding on site.

- Kitchen is observed not in operation during inspection. No food preparation to be done until Thurs/Fri this week.

Observations:
- Walk-in cooler at 2'C
- Walk-in freezer at -19'C
- All bar coolers at or below 4'C
- Preparation coolers at or below 4'C
- No hot-holding during inspection. Chaffing tables are available for buffet.
- All food observed covered and stored at least 6 inches off the floor (with exception of boxed food items in the dry storage area)
- General sanitation okay
- Hand washing station in staff washroom and at the back of the kitchen supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 72'C at plate surface (above minimum required final rinse temperature of 71'C)
- Chemical dishwasher at bar measured at 12.5 ppm iodine concentration with test strip
- DDBSA/lactic acid sanitizer at 2-compartment sink measured at 272/706 ppm
- Professional pest control company is contracted to complete inspections
