Comments

Hand wash stations were provided with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm - spray bottle and buckets.
Walk-in cooler was at 1-2 deg C.
Upright freezer was at or below -18 deg C.
Fridge cooler (bottom) was at 3-4 deg C; freezer (top) was at -18 de C.
Hot holding for gravy was at 61 deg C; chicken was above 74 deg C.
Temperature log was incomplete. Ensure that temperature log available and complete.
Temperature log must be done daily.
No signs of pests noted. Pest control in place.
Staff hygiene - food handlers in the back wearing hair nets and aprons.
Washrooms were sanitary condition and provided with sanitary facilities.
Documents to be checked for follow-up:
1. Keep copies of Food Safe 1 certificates (food handlers)
2. Keep temperature log on-site for inspection
