Observation (CORRECTED DURING INSPECTION): Prep. cooler and hot-holding case lacked a thermometer at the time of inspection.
Corrective Action(s): Operations Manager of Hen Long Market placed brand new thermometers from Hen Long Market inside the prep. cooler and hot-holding case at the time of inspection. Ensure refrigeration units are monitored regularly to maintain temperatures at or below 4 degrees C and hot-holding units are monitored regularly to maintain a temperature at or above 60 degrees C.

Observation: In Operator's absence, no staff on duty had valid FOODSAFE Level 1 or equivalent course training.
Corrective Action(s): Ensure at least one staff member on duty in the absence of the Operator holds valid FOODSAFE Level 1 or equivalent FOODSAFE Level 1 training. Please have enough staff complete a FOODSAFE Level 1 or equivalent course to fulfill this requirement and provide an update to the district Environmental Health Officer within 1 month to provide an update. Comments

Both handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels. Note: Garbage bin was not located conveniently near the handsink in the front service area. Operations Manager of Hen Long Market added a brand new garbage bin near this handsink during the inspection.
Walk-in-cooler, prep. cooler, display cooler below the hot-holding case, and upright cooler were at or below 4 degrees C.
Upright freezer was at or below -18 degrees C.
Hot-held food inside the hot-holding case was at or above 60 degrees C.
100 ppm chlorine sanitizer was available inside both sanitizer pails.
2-compartment sink was supplied with hot and cold running water and it was equipped with sink plugs.
Manual ware-washing was not occurring at the time of inspection. Ensure all preparation utensils and food contact surfaces are washed, rinsed, sanitized, and then air dried.
Slicer appeared to be in a clean condition.
Ventilation hood appeared to be in a clean condition.
No signs of recent pest activity were present at the time of inspection.
Permit to operate was posted in a conspicuous location.
