Observation (CORRECTED DURING INSPECTION): Foam meat containers stored in top shelf had meat residue on them. There is cross contamination. Given that the containers were not actively being used to package meat and left at room temperature. The microbes on raw meat can grow to large quantities and cross contaminate other products
Corrective Action(s): Ensure staff are aware of products/surfaces they are touching when handling raw meats and wearing gloves. Complete packaging of meat products and dispose of any contaminated foam containers with meat residue

Observation: Meat stored inside cardboard boxes in walk in cooler. Meat juices had been absorbed onto cardboard which is an ideal condition for microbal growth from raw meat

General observations/good practices
- Display cooler at 12C
- Walk in meat/poultry cooler at 0C
- QUAT at 200ppm available at dispenser
- Good overall sanitation
- 2 compartment sink available and in good working order
- 1 compartment prep sink available
- Hand sink had soap/paper towel
- Adequate staff knowledge on cleaning/sanitizing procedures of meat contact surfaces
- Curtains used to section off meat processing area from procedure area
- No pest activities observed
