Handwashing sink: soap, paper towel, hot & cold running water
Walk-in cooler: 4C
Walk-in freezer: -17C
Standup cooler: 4C
Standup freezer: -12C (products are hard)
Hot holding units were pre-heated prior to use
Food delivered from Queens Park were over 60C, separate tongs/ladles
Thermometers available, remember to sanitize probe between uses
Temperature logs are up to date
*Note: walk-in freezer and walk-in cooler sheet are swapped
Dry storage and lighting were adequate
Dishwasher (high temp): 78.6C at plate
Manual warewashing procedure reviewed, test strips onsite (please replace expired strips)
Quats sanitizer in dispenser and buckets were at 200ppm
General sanitation is good

*Recommend storing the green food covers upside down or place a lid on the top cover, as well as storing utensils business ends down.
