Observation (CORRECTED DURING INSPECTION): 1) Scoops were stored directly in dry ingredients.
2) Some portions of meat were stored in grocery bags/shopping bags.
Corrective Action(s): 1) Store scoops separately from dry ingredients to prevent contamination of food.
2) Only store food in food-grade bags or containers, such as Zip-loc bags.

Observation: 1) Accumulation of food debris present under kitchen equipment.
2) Grease accumulation also present on doors and handles of coolers and freezers.
Corrective Action(s): 1) Ensure floors underneath equipment and in hard to reach areas are cleaned regularly.
2) Also ensure doors and handles of equipment are cleaned and sanitized daily.

- Hand sinks were equipped with liquid soap and paper towels
- Bleach sanitizer solution available in spray bottle at 100ppm
- Dishwasher had >50ppm chlorine detected after final rinse
- Buffet steam table was measured to be above 60C; no foods stored in steam table at time of inspection
- Ice cream freezer measured to be -14C
- Sliding glass-door cooler in front area measured to be 4C
- Prep cooler and inserts in back area at ~2C
- Cooler in back area measured to be 3C
- Chest freezer in back area measured to be -17C
- Upright freezer in back area measured to be -22C
- Temperature log available, reminder to record temperatures daily
- Plywood boards used as previously as shelving have been removed. Please also remove the unfinished wood used as post for hanging utensils.
