Comments

=Meat walk-in cooler and processing room handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in coolers (veggie 0C, meat 3C), walk-in freezer (-19C) and all other display coolers and freezers in the store measured within appropriate temperature ranges
=2 compartment sink in processing room used for washing dishware. staff sanitize dishware with 100 ppm chlorine bleach solution (tested to be 100 ppm chlorine). Provided operator with 2 compartment warewashing method in Chinese.
=Sanitizer solution approximately >400 ppm QUATS available in spray bottles. Discussed with operator to have dispenser concentration adjusted to be 200 ppm QUATS, as this formulation, according to the chemical bottle, will require rinsing after use on food contact surfaces.
=General sanitation was satisfactory. With the exception of the above noted violation, general food storage practices were satisfactory at the time of inspection
=No evidence of pest activity at the time of inspection
