Follow-up inspection to previous follow-up (RPT#: JMAA-B6B2S5).

- All compartments of hot-holder are now at 60C or greater (bottom compartment: 63C, middle / top compartment at approximately 80+C). Ensure that the all compartments (including the bottom compartment) maintain an ambient temperature of 60C or greater, and actively maintain your temperature logs each day. Logging is important to ensure that hot-holding and cooling equipment is working properly at all times
- Ice logging present and up-to-date for the dairy creamers. Remember that ice must be switched out every 2 hours. Periodic audits will be conducted to ensure that this is being adhered to
- Dispenser for creamer is on order, approximate ETA 1st week of December. Staff to update the EHO once it arrives

Thank you for your co-operation. You are now permitted to store items inside the hot-holder.
