Observation (CORRECTED DURING INSPECTION): Beef for teriyaki is measured at 54C made just 2 hours ago.
Corrective Action(s): Beef discarded. Ensure that hot potentially hazardous food is kept at 60C or hotter. Use thermometer onsite to check.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: All bleach sanitizers were measured to be 0-50ppm. Wet wiping clothes were left on the counter after use. Repeat. Test strip onsite did not change color properly as demonstrated to staff onsite.
Corrective Action(s): 1) Ensure there is 100ppm bleach sanitizer in all sanitizing buckets. Allocate one sanitizing bucket to prep cooler station, remove the staff coffee machine. 2) Keep wet wiping clothes in 100ppm bleach sanitizer after use. 3) Order new test strips within expiry date.

Observation (CORRECTED DURING INSPECTION): Kitchen handsink is blocked from trolley and garbage can. See photo.
Corrective Action(s): Do not block the handsink. Staff informed that the salmon was delivered and was placed where the trolley usually is, hence the trolley was moved and blocked the handsink. The new freezer is also too large, blocking kitchen space. Change to a smaller freezer or come up with a solution so that the handsink is not blocked. Each handwash stations need to be accessible at all times.

Observation (CORRECTED DURING INSPECTION): Multiple food in the cooler were uncovered (cut veggies, takoyaki etc.). Repeat.

Observation (CORRECTED DURING INSPECTION): Two packs of frozen udon were left on the counter and measured to be at 9C.
Corrective Action(s): Keep the udon in the freezer or cooler if ready to use.

Observation: Fruit fly activity noted throughout the premises, predominately storage room by dishpit and the back storage room (container of raw onions). Glue strip hanging from ceiling is full and needs to be changed.
Corrective Action(s): Sanitation is a recurring issue and conditions onsite contribute to pest harbourage. Refer to comments on code 305 and 306.

Observation: Standing water noted in the kitchen (beside fryer station and under sushi bar handsink). There is also standing water noted outside of the restaurant on the opposite side of the sushi wall.
Corrective Action(s): Remove standing water and do a deep clean of the facility. Refer to comment on code 305.

Observation: General sanitation is poor. All counters, shelves, flooring needs to be cleaned. Last deep clean was informed to be done about a month ago. Food debris noted on the flooring especially around small storage room by dishpit. Soy sauce spill noted. See photos.
Corrective Action(s): Remove food debris and build up. Clean and sanitize all counters, shelves, and flooring area. Complete within 2 weeks.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Total number of seats in dining area (to dine in, not lounge) were counted to be 44. Condition on the restaurant was to maintain 40 seats only until further notice. One of the ceiling light in the back storage room is out.
Corrective Action(s): Remove 4 seats in dining area immediately. Replace said ceiling light.
