Observation (CORRECTED DURING INSPECTION): Roll of paper towel available at two compartment sink which is the only hand washing facility in the back food preparation area, but not put in the dispenser.
Corrective Action(s): Ensure paper towel is always available in the dispenser in order to make this station a suitable hand wash station as this area is very cluttered, the roll can get misplaced/dropped/wet from hands...etc.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: A) Noted tape on chest freezer lid at end of cookline.
B) Operator has ordered a large stainless steel tube which fills with water and freezers to make his own ice wand. The ice wand is very big and does not appear to fit in the dishwasher.
Corrective Action(s): A) Remove tape and repair/replace chest freezer lid as needed. All surfaces are to be smooth, durable and washable.
B) Operator to obtain a proper ice wand. Operator to send information/specifications on the tube to the health inspector to determine if it is suitable for food preparation if he wishes to obtain a smaller one that can fit in the dishwasher.

All hand wash stations fully equipped with soap, paper towel, hot and cold running water (washroom, two compartment sink, front drink making area) - See violation code 401 re: placing paper towel in dispenser
All coolers 4⁰C or less (drink cooler, prep cooler, sliding two door cooler...etc)
Freezers x 2 -19C and -18C
Hot holding of rice in rice cooker, peanut sauce in hot holding unit and pots of curries on the stove all higher than 60C
No potentially hazardous foods were stored at room temperature at time of inspection.
Sanitizer with cloths submerged in kitchen and front drink making area 100ppm
General sanitation satisfactory. No obvious sign of pest infestation noted at time of inspection. Screen in place over open back door at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
High temperature dish washer achieved 71⁰C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation areas had covers..etc)
Washroom door opening into the back area had self closing hinge installed on it.
