Observation (CORRECTED DURING INSPECTION): A bag of frozen chicken stored on a drain board of 3-compartment sink/dirty dishes were in the nearby compartment.
Multiple food items were not covered in the reach-in cooler (cooked rice, cut vegetables, and sauce).
Corrective Action(s): Immediately. The bag of chicken must be defrost in a cooler or under cold running water. Nothing must be in the 3-compartment sink. All dishes must be properly cleaned and sanitized/in the clean 3-compartment sink.
Ensure that all food is covered by lids or plastic.

Freezers temperature at - 21.0 C.
Reach-in cooler at 4.0 C.
Note: It was no hot holding at the time of inspection.
Dry storage area - organized/bins with lids - available.
Bleach sanitizer - available.
3-compartment sink - satisfactory.
No signs of pests noted at the time of inspection.

Note: Business is going to be running approximately for 2 months.
