Operator has a written food safety plan on site. Ensure to send a copy to your health inspector for review.

Important note: Staff are to be fully trained to follow cooking procedures and keeping records. Roasted chickens internal temp must be measured for each batch to ensure food safety. Keep the records for each batch. Staff training discussed.

Roasted chicken internal temperature measured at 62 degree C in hot holding unit. Records kept updated. Ensure to monitor daily. Discard the food if food temperature is below 60 degree C and above 20C for more than 2 hours.

Hot bar is not operational at this date. Operator stated hot bar will be functional as soon as possible. Ensure to notify your health inspector for a follow-up inspection regarding this section.
