Met with Rick, Manager, and discussed the following:

- Daily cleaning and sanitation process.
Bleach has been used as approved sanitizer and available in the spray bottle. Measured concentration of 100ppm
- At least one food handler is available per shift
- Daily temperatures check/ just ensure to keep a daily records ( will mail you a copy of the daily temp logs for your future record )
- Temperature readings: ice cream freezer - 18C/ cooler prep 3C/ display 4C
- All food is covered and protected during storage
- Use only single use container

Ensure that all wiping clothes are stored in the approved sanitizer when they are not in use.

Suggestion:
- use the staff bathroom sink for discarding the gray water. It will prevent the potential cross contamination of the food handling area.
Very well organized facility.

Seasonal business from April to September.
