306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Build up of grime/debris on some food equipment areas including lower shelving of food equipment, dishwashing areas and along walls and corners that requires more frequent cleaning attention; Also, brooms/dustpans were found being stored in kitchen area and not sanitary to store in this location but rather to keep these mop/janitorial area
Corrective Action(s): * Ensure proper cleaning done of all food equipment, walls, baseboards, etc., on regular basis so that build up of grime/debris not accumulating; incorporate a weekly/monthly cleaning schedule to ensure it is done; ensure all cleaning equipment kept away from food prep/service areas and stored properly in janitorial room.

Observation: * Some food equipment was found being stored on freezer units and this is not storage shelf area; operator discussed installing additional shelving for proper storage; also, food equipment, etc., being stored on the walk-in coolers not proper storage shelf and to be removed
Corrective Action(s): * Ensure all food equipment stored on proper food grade shelving suitable for storing food equipment; remove all equipment and other items off the walk-in cooler as this is not a storage shelf; provide additional storage shelving as needed

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: * Wall near dishwashing area is missing baseboard and there is exposed gap where food can accumulate; it requires repair
Corrective Action(s): * Ensure all walls in proper working order and free of deterioration, etc; this also applies to any other areas where deterioration can occur such as floor baseboards, etc.

* Dishwasher final rinse was minimum 50 ppm at rinse cycle; this dishwasher is used also for Good Taco food service
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder
* Hot-holding units were 60'C/140'F or hotter
* Sanitizer was available at 200 ppm concentration; keep wiping rags in sanitizer between use (eg. red sanitizer bucket to store wiping rags)
* Note: for sanitizer in pot used for sanitizing woks-- ensure it is kept off floors and not stored directly on the floor
* Monitoring records were available for cooler/freezer storage areas but not for hot-holding; UPDATE hot-holding monitoring records and keep daily
* WorkSafe BC Covid-19 plan in place; ensure to follow and maintain areas in sanitary condition; update plan to current phase to include more details (eg. frequency of cleaning, etc)
* Food safe level 1 trained staff were on site
