209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
Uncovered, food inserts were found beside and below the handwashing sink in the kitchen. Dirty water will splash into the food, when staff wash their hands.
Corrective Action(s): Immediately move the food inserts away from the handwashing sink, and do not store food beside or under the handwashing sink.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Cardboard boxes, soaked with oil, cover shelves and the floor are changed every 2nd day. The oil in the cardboard will attract pests and is a fire hazard.
Corrective Action(s): The cardboard boxes must be thrown away at the end of EVERY night and replaced with new ones in the morning. If you do not do this, cardboard will NOT be allowed to be used to cover these surfaces.

310 - Single use containers & utensils are used more than once [s. 20]
Observation:
Staff wearing disposable gloves are rinsing them under water, instead of replacing them with new ones. Disposable gloves are not durable or made to be washed. Chemicals from the gloves could get into the food.
Corrective Action(s): Immediately STOP using disposable gloves, as staff are NOT using them properly. Staff shall wash their hands when they become dirty, or when they complete a task and start a new task. Discuss this with all staff.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
There are a number of burned out light bulbs in the kitchen area. The light level is low, which makes it difficult to see and work safely, and it too dark to determine how clean the premises is and/or to clean the premises properly.
Corrective Action(s): Immediately install working light bulbs in all light fixtures in the kitchen, so the light level is increased.

Comments

A routine inspection was completed, the following observation was made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C, and thermometers present.
- Low temp dishwasher had a [Cl2] between 50-100ppm.
- Sanitizer in spray bottles had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; foods stored in groups with raw proteins separate from other foods; and all foods stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Improvement seen from the last inspection.
- No signs of pests.
- FoodSafe certified staff present.
- Duct tape has been removed, between the prep sink and dishwashing sink. Silicone sealant has been installed to seal the opening between the equipment.
- Health permit fees paid and a valid decal found on the posted health permit.
