Prep line cooler registered 3-4 deg C.
Upright freezer registered at 6-7 deg C. (nuts, dried cranberries, butter stored in this cooler).
-Remove nuts in boxes inside the cooler so increase air circulation and to maintain temp at 4 deg C or colder.
Dishwasher final rinse temperature reached 76.7 deg C.
Fudge production at time of inspection.
Floors cleaned daily after production.
Coated nuts are produced on the weekend.
Pest control monitoring in place.
No issues or concerns at time of inspection.
