Observation (CORRECTED DURING INSPECTION): Observed cooler in serving area storing cold potentially hazardous food above 4c. Minimum registering thermometer recorded 7.7c and salsa probed at 6.5c. Operator recently performed the temperature check of cooler and service person arrived on-site during time of inspection. Corrective action: Potentially hazardous food must be moved to another cooler at 4c or below to prevent the growth of pathogens.

Observation: Observed teh accumulation of dust/debris in the grate of the air conditioning unit. Corrective action: Remove dust/debris and clean air conditioning unit.

Observation: Cooler in serving area not storing food items at 4c or less. Operator called service person and arrived during time of inspection. Corrective action: Repair cooler to ensure food items are storaged at 4c or below

Comments

-Observed the accumulation of slime surrounding the outer frame of the ice machine. Corrective action: Clean and sanitize the ice machine to prevent possible contamination of ice. Ensure ice machine is routinely cleaned and sanitized as per the sanitation plan or increase the frequency that it is completed.
Notes:
-Low temperature dishwasher measured 100ppm chlorine at dish surface
-Multiple sanitizer solution buckets with cloths measured at 200ppm quats
-No evidence of pests at time of inspection
-No conditions observed that allow for pest entry, harbouring or breeding
-Overall cleanliness is satisfactory
-chemicals and cleaners are stored correctly and labelled
-Pest control measures in place and serviced monthly
-Walk-in cooler measured at 2.2c
-Walk-in freezer measured at -20.1c
-Standing freezer measured at -19.1c
-Cooler drawers measured at 3.3c and 2.9c
-Prep cooler measured at 3.1c
-Ice cream freezer measured at -20.2c
-Hot holding equipment measured as the following: 62.1c (gravy), 64.1c (soup), 63.1c (cheese sauce) and 60.5c (hollandaise sauce)
-Refrigeration and hot holding units equipped with an accurate thermometer
-Permit posted in a conspicuous location
-Operator and other staff on-site have a valid foodsafe level 1 certificates
-Food is sotred 6 inches above ground or greater
-Food within coolers and freezers is covered and organized.
-All handsinks have the following:
-Liquid soap, paper towel and hot/cold running water
-Discussed meat slicer cleaning and sanitizing procedures
-Washrooms are clean and well maintained
-Discussed procedures for cooking, hot holding, cooling and re-heating of hot holding items
