Observation (CORRECTED DURING INSPECTION): Top part of prep cooler across from the grill operating >4'C. Staff had advised the door was left open during lunch rush. Temperature record from this morning said unit was operating <4'C.
Corrective Action(s): Ensure to monitor the unit. If temperature does not fall below 4'C during the afternoon check, adjust/service the cooler. Ensure the door is kept closed when not in use to help maintain temperature.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-Temperature monitoring system in place. Records available on site.
-Prep cooler by the grill not in use. No food products stored in this unit at this time.
-200ppm QUAT available in labelled spray bottles and in buckets to hold wiping cloths.
NOTE: Ensure all bottles are filled with 200ppm QUAT- refill on a regular basis.
-High temperature dishwasher achieved 74.9'C at the plate level after final rinse.
-Glasswasher achieved >12.5ppm iodine at final rinse.
-Front bar area satisfactory. Coolers and Warmer temperatures all within requirement.
-Ventilation canopy hood serviced and maintained.
-General food storage practice satisfactory.
-General maintenance and sanitation satisfactory. However, sanitation level can be improved by scrubbing off/cleaning hard to reach areas on a more regular basis.
-No evidence of pest activity observed.

NOTE: Ice machine not in use. To be replaced in near future.
