Observation (CORRECTED DURING INSPECTION): Cooked noodle product probed at 20C in the prep cooler and has been in the prep cooler for more than a day. Operator mentioned hot water is periodically changed in the cooked noodle product every few hours to maintain quality. This food handling practice is not acceptable as it increases the ambient temperature of the prep cooler. Other foods in the prep cooler like yogurt remain less than 4C.
Corrective Action(s): Discard cooked noodle product. Do not store hot water in the prep cooler. Do not store cold potentially hazardous foods above 4C for more than 2 hours. Do not store cold potentially hazardous foods above 4C in this prep cooler. Remove all cold potentially hazardous foods from this cooler until it maintains 4C or less.
