Routine Inspection: - Hand washing stations (main and in chicken cooler) fully equipped with liquid soap, paper towels and hot/cold running water. - 3-compartment sink available for manual warewashing. Sink plugs available. - Concentration of QUATs sanitizer at 3-compartment sink = 200 ppm. - Concentration of QUATs sanitizer in two spray bottles = 200 ppm. - All temperatures met health requirements: Coolers (walk-in, chicken, prep, all displays) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit). Freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit). Hot holding (for rotisserie chicken) maintained above 60 degrees Celsius (140 degrees Fahrenheit). - Temperature logs and sanitation logs maintained. - 2-compartment sink available with hot/cold running water in the chicken cooler. - Meat slicers are cleaned and sanitized every hour. - General food storage practices very good: Foods covered and protected from contamination. Foods stored at least 6 inches (15 cm) off the floor. Storage areas well organized. - Overall cleanliness and maintenance satisfactory. - No signs of pest activity at the time of inspection. - Premises well lit. Note: Health Inspector is aware that the operator has contacted the Billing department for the replacement Permit to Operate.
