Routine Inspection:
- Hand washing stations (main and in chicken cooler) fully equipped with liquid soap, paper towels and hot/cold running water.
- 3-compartment sink available for manual warewashing. Sink plugs available.
- Concentration of QUATs sanitizer at 3-compartment sink = 200 ppm.
- Concentration of QUATs sanitizer in two spray bottles = 200 ppm.
- All temperatures met health requirements:
Coolers (walk-in, chicken, prep, all displays) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
Freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
Hot holding (for rotisserie chicken) maintained above 60 degrees Celsius (140 degrees Fahrenheit).
- Temperature logs and sanitation logs maintained.
- 2-compartment sink available with hot/cold running water in the chicken cooler.
- Meat slicers are cleaned and sanitized every hour.
- General food storage practices very good:
Foods covered and protected from contamination.
Foods stored at least 6 inches (15 cm) off the floor.
Storage areas well organized.
- Overall cleanliness and maintenance satisfactory.
- No signs of pest activity at the time of inspection.
- Premises well lit.

Note: Health Inspector is aware that the operator has contacted the Billing department for the replacement Permit to Operate. The permit fee for the new fiscal still needs to be paid by the operator before the new decal can be mailed out.
