Follow-up inspection at 4pm:

-Handsinks fully stocked, hot/cold water available and clear for use
-2-door display in kitchen 3 deg C (vegetable) -thermometer available at food level, cavity and wire shelves cleaned
-wooden cutting boards shaved down and cleanable now

Premise okay to open

Other infractions corrected/maintained:

-mop sink not used for food processing
-mop hose removed -operator will install vacuum breaker before using hose
-live seafood tanks -algae removed
-coverage of foods in fridges adequate
-no foods under sinks
-no open canned foods used for storage
-inside dry storage room has been cleaned
-dishwash floor wall joints all coved
-no lightly packaged foods being stored in garage
-back screen door shut
-Daily tracking sheets for fridges and dishwashers will be maintained as per operator

NOTE:
-suspension of Beijing duck in two courses and Deep fried marinated duck menu items still in effect. Operator is working on Food Safety Plan and completed cooling charts -do not serve these foods until the plans are approved and your cooling methods are verified
