Observation (CORRECTED DURING INSPECTION): All food items in display cooler were greater than 4 deg. C. Food items included garlic sausage, cheese, hot dogs, pork ribs, etc. Internal temperature of hot dog and egg was 7.9 and 10.3 deg. C., respectively. All food items were discarded by operator.

Observation (CORRECTED DURING INSPECTION): No chlorine detected in sanitizer bucket. New batch of chlorine sanitizer was prepared at time of inspection. 100 ppm bleach solution available for food handlers. Bleach sanitizer (at least 100 ppm) must always be available to ensure food contact surfaces are adequately sanitized.

Observation (CORRECTED DURING INSPECTION): No paper towel or hand soap available at front hand wash station. Paper towels and liquid soap were added by operator at time of inspection. All hand sinks are to be adequately stocked with liquid soap, paper towels and hot and cold running water at all times to ensure food handlers can adequately wash their hands.

Observation: 1. Some food items in walk-in cooler found uncovered. All foods are to be kept covered to prevent contamination of food items. This was corrected at time of inspection.
2. Light bulb in walk-in cooler missing its protective shield.
Corrective Action(s): 2. Obtain shield to protect food from glass contamination in the event the lightbulb breaks. Correction date: 1 week

Observation: Mouse droppings observed under meat display cooler and table at front of store. Considerable amount of flies also present in store.
Corrective Action(s): Contact pest control for mouse and fly problem. Follow all recommendations by pest control. Reports are to be kept on-site for review by the health inspector.
Clean up and remove all droppings. Correction date: 2 days.

Observation: Display cooler ambient temperature was 12 deg. C. Operator has not been monitoring the temperature. Unsure of how long this unit has been not in good working order. Service person was called at time of inspeciton.
Corrective Action(s): Have this unit repaired or replaced as it must be able to keep potentially hazardous foods at 4 deg. C. or less at all times. This unit is not to be used until verified by an inspector. Contact inspector once this unit has been repaired or replaced. Correction date: 2 days
