Observation: Walk in cooler and line cooler at 5.5-7C. Staff also stated that closing mechanism for walk in cooler door was recently repaired but now can get stuck and prop door open slightly, letting cold air out.
Corrective Action(s): Have both coolers looked at/serviced by a technician tomorrow to ensure that they maintain 4C (40F) or less at all times. Also install a plastic curtain on inside of walk in cooler door to keep cold air in as both coolers are located directly across from cooking areas.

Observation: Observed a dust build-up on ceiling tiles in kitchen, mold build-up on pipe in walk in cooler and on ceiling/wall of walk in cooler. Food build up noted on shelving racks in walk in cooler and grease build up noted under shelf where domestic deep fryer is used.
Corrective Action(s): Clean above mentioned areas and move deep fryer to a location under the mechanical ventilation within next two weeks.
