Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Upper part of main pizza prep cooler had foods stored at 7.3-8.7'C. Food items were placed in the unit less than 30 minutes prior to the inspection. Staff had adjusted the temperature knob at this time. Operator had advised that the technician had already been contacted for service. OK.
Correction: Ensure to have the cooler repaired. Until then, continue to place small amount of food in each container, so that each will be used up within 2 hours as agreed at this time.
Comments

Follow-up inspection conducted:

-Pizza prep cooler repaired and now operating below the required temperature of 4'C. Good.
-No leak observed from the dishwasher. Grey water collecting tray secured on the side. OK.
-Droppings from floor underneath storage shelving unit removed/cleaned. More traps have been set up.
NOTE: Ensure all vegetables stored at the back are stored in pest proof containers as discussed at this time.
