Observation (CORRECTED DURING INSPECTION): * Sanitizer was not set up or available at beginning of inspection; operator set up upon request-- chlorine solution at 200 ppm minimum.
Corrective Action(s): * Ensure sanitizer available at ALL times during operation and ready to use; store wiping rags in sanitizer between use; Provide adequate bleach supplies on site

Observation: * Containers and wrapped plates of raw fish were being stored in pop in pop cooler and this is unsafe, unsanitary practise and can lead to cross contamination; Also, newspaper was being used at cooking line to absorb grease,etc., and this is not acceptable practise and can lead to cross contamination; Also, toothbrushes were being stored at hand sink and this is unsanitary practise-- operator corrected this; personal items were being stored on food prep counters and this is unsanitary; operator corrected this

Observation: * Some build up of grime on some food equipment/shelving and behind cooking line that requires immediate attention and more regular maintenance

Observation: * Walk-in cooler was converted to storage room and this is unacceptable as walk-in cooler required for cooler storage space to store perishable products; operator turned unit on and said they will use as cooler

Comments

* Staff were not dressed in proper attire or with hair protection at beginning of inspection; this was corrected immediately
* Dishwasher final rinse was 74'C/165'F or hotter
* Cold-holding units were 4'C/40'F or colder; walk-in cooler was shut off and being used as storage-- operator turned back on as it is required for proper operation
* Freezer units were -18'C or colder
* Sanitizer was not set up at beginning of inspection-- operator corrected this and set up bleach solution in buckets to store wiping rags
* Monitoring records were available but not up to date; update temperature monitoring schedules to include ALL coolers for daily monitoring
* Food was covered in storage areas
* Note: personal items to be stored away from food areas to reduce risk of cross contamination
* Note: reorganize/clean all areas as some build up of grime/debris noted in storage areas/food equipment
* Food safe level 1 required and must be updated every 5 years
* Follow up inspection: next week
