Observation (CORRECTED DURING INSPECTION): Coffee dispensing machine nozzle area observed with caked on residue. Knife and tongs in clean utensil drawer noted with debris on the food contact surface. Can opener blade observed with rust or residue on the tip. Staff stated this can opener is not used, only the handheld can opener is used.
Corrective action: Staff initiated cleaning of the coffee dispenser, knife and tongs. Remove the manual table mounted can opener and clean then sanitize the blade top or remove it from the kitchen. Food contact surfaces on these utensils/equipment with old debris may contain pathogens or physical contaminants that may enter food that is served. Thus, these items must be cleared and sanitized before placing in storage.

Observation: Excess debris/oil observed on hood vents above grill. Staff informed the hood vent baffles are bleared professionally every 6 months. Next service date is November 2023.
Corrective action: Clean and sanitize the hood vent baffles to prevent oil/debris from dripping onto food/food contact surfaces below. Falling debris from the hood bent baffles may contaminate the food served and prepared at the grill area or lead to conditions that may attract pest.

Temperature:
- Cook line standup freezer temperature was satisfactory. Items inside include frozen fries (frozen solid)
- Prep cooler top 4 degrees Celsius (required: at or below 4C)
- Prep cooler bottom at 3.8C
- Beverage cooler at 4C
- Glass, sliding door cooler at 2C
- Chest freezer at -29C (required: at or below -18C)
- Freezer 2 (Standup) at -28C
- Freezer 3 temperature satisfactory. Items inside frozen solid
- All coolers and freezers were equipped with accurate thermometers
- Walk-in cooler measured 4C and lower
- Hot holding gravy measured 73C (required: at or above 60C)
- Temperature logs maintained twice daily. Temperatures recorded show compliance with safe hot and cold holding limits

Sanitation:
- All handsinks were equipped with hot and cold running water, liquid soap and paper towels.
- QUATS surface sanitizer pails achieved 200 ppm in each bucket (hear coffee machine, under counter beside flat top grill, and under counter in prep area)
- Three compartment sink equipped with hot and cold running water, drain plugs and QUATS dispenser achieved 200 ppm with test strips. Test strips available (expiry: Aug 1, 2024)
- High temperature dishwasher final rinse temperature measured 73.6 C (required: 71C or higher)
- Two compartment sink with hot and cold running water and drain plugs available for food preparation
- In-use utensils stored in a sanitary manner, with handles extending outwards from food and container, and are washed every hour as per staff information (e.g. fries tossing bowl and tongs, sandwich knives, gravy ladle).
- Foods are stored in covered containers in each of the coolers, freezers and dry storage areas. Raw animal foods stored below ready to eat food in the walk-in cooler. All food stored off the ground.
- Staff informed that the leaking rinse sink in 3 compartment sink is being service: awaiting parts for repair. A bucket is in place to capture dripping water.

General:
- Staff hygiene is satisfactory. Staff wear hair nets.
- FOODSAFE level 1 equivalent trained Staff onsite (expiry: Nov 21, 2025
- No signs of pest activity during inspection. Pest control contracted monthly.
