Observation: - Mouse droppings (excrement) present along edges of floor in the following areas:
- along wall where ice machine in located (beverage station)
- under line cooler
- in room with hot water tank
- in hallway storage closet
- under shelving in staff area
Corrective Action(s): - Clean up all droppings and sanitize areas. Cleaning initiated at time of inspection.
- Monitor for any additional activity and ensure any additional droppings present are cleaned up promptly.
- Continue to maintain regular pest control service. Have Pest Control Technician identify any additional entrance points or harbourage areas and ensure these are addressed.
- Submit most recent Pest Control report to EHO for review.

Observation: - Opening present in wall under handsink at beverage station
- Ceiling tiles missing in hallway closet and room where hot water tank is located.
- Weather strip missing from back door
Corrective Action(s): - Cover/repair opening in wall. Surface must be smooth and washable. Ensure spaces around pipes are sealed/filled with pest proof materials (eg. steel wool)
- Replace missing ceiling tiles in storage closet
- Replace missing weather stripping on back door.

Comments

- General sanitation satisfactory aside from presence of rodent droppings as noted in above violation.
- Handwashing sinks in kitchen (2) and beverage station (1) supplied with liquid soap and paper towel
- Coolers, freezers and hot holding (rice cooker) were operating at required temperatures (4C or colder; -18C or colder; 60C or above).
- Temperatures checked:
- 2 door worktop cooler 1C
- Line cooler 1C
- Drawer freezer -19C
- Single door worktop freezer -21C
- Walk-in cooler #1 1C
- Walk-in cooler #2 3C
- Beverage cooler 3C
- Cooked rice 70C
- Temperature of coolers, freezers and dishwasher are checked twice daily. Records present and appear complete and up to date.
- High temperature dishwasher was operational and met required sanitizing temperature. Final rinse was 80.4C at dish surface.
- Ice machine maintained in sanitary condition with ice scoop stored in sanitary manner outside ice bin.
- In use wiping cloths kept in chlorine sanitizer solution 100-200ppm.
- Quats sanitizer solution (200ppm) present in spray bottles and used to sanitize customer tables.
- Staff/public washrooms maintained with liquid soap and paper towel for handwashing.
- Foodsafe requirement met at time of the inspection. Certificates for Manager and staff present for verification.
- Pest control contract in place with monthly service. Most recent report not available at time of inspection. Manager to obtain and email to EHO.
