Comments

Routine inspection.
Coolers (2 prep, walk in) are at 4C or colder. Temperature records are being kept.
No hot holding during inspection.
Reviewed procedures for cooking and cooling sauces - following posted procedures and cold water bath is used for quicker cooling as per staff.
Hand washing sinks have hot/cold water, liquid soap, and paper towels.
Person on site today has a valid Food Safe certificate.

Food safety plan and sanitation procedures posted.
Chlorine is used for sanitizing wiping cloth - 50ppm - added more chlorine to make a 100-200pm chlorine solution.
Manual utensil cleaning and sanitizing - chlorine used.
Cleaning - has improved - see above.
Lighting - some burned out bulbs require replacement to improve lighting. Cover glass fluorescent bulbs or use a plastic tube cover.
Pest control program is in place. Follow directions of licenced pest control. Continue to monitor.
