302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Dishwasher not achieving final sanitizing rinse of greater than or equal to 50ppm Chlorine at the dish. Dishwasher was supposed to have been serviced by professional technician over the weekend and has not been serviced by dishwasher technician. Owner claims dishwasher was maintaining chlorine final rinse of 50ppm at the plate however today this has not been proven. . Corrective Action(s): Dishes are to be washed and rinsed in dishwasher and TEMPORARILY sanitized in two compartment sink and air dried. Owner able to demonstrate proper sanitizing procedures at time of inspection. Due to owner's ability to properly demonstrate manual ware washing and very small size of facility (12 seats) FHA will grant permission to TEMPORARILY use manual ware washing at facility. Use take out single use disposable containers as much as possible during this time to reduce reliance on manual ware washing. Ensure third compartment sink is sanitized prior to use. Ensure all staff are aware of changes. Owner must be present to ensure procedure is occurring. . Violation Score: 15

Dishwasher was supposed to have been serviced by a professional over the weekend and was not. Dishwasher not achieving final sanitizing rinse at the plate of minimum 50ppm Chlorine . Corrective Action(s): Dishwasher is to be repaired by professional dishwasher technician IMMEDIATELY and dishwasher is to be repaired such that minimum of 50 ppm Chlorine is reached and maintained at the sanitizing cycle . Violation Score: 15
