General sanitation of the store and the kitchen is satisfactory.
Note: Ensure cleaning underneath and behind the equipment frequently
Hand washing stations are equipped with hot/cold running water, liquid soap and paper towel.
Storage Area:
General cleaning is good. Food is stored above the floor.
Walk in fridge temp @1.5C. Walk in freezer @-29C
Chest freezer @-28C
Kitchen area:
Fridges are at 0.5C. Freezer @-21C
Food prep table is clean and sanitizer bottles are labelled properly.
Thawing and cooking procedures are followed.
Store Main Area:
Hot holding/cold holding are satisfactory
Thermometers are available. Temperature log is maintained.
